Use High-Quality Cocoa
The quality of cocoa powder or chocolate significantly affects the final flavor. Opt for unsweetened, high-quality cocoa for the best results.
Do Not Overmix
Over mixing can develop too much gluten, leading to a dense cake. Mix just until the ingredients are combined.

1 cup granulated sugar / (200 g)
1 cup all purpose flour / (125 g)
1/4 cup + 2 tbsp cup cocoa powder / (40 g)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg
1/2 cup buttermilk / (120 g)
1/4 cup olive oil / (54 g)
2 tsp vanilla extract
2/3 cup hot water / (160 g)
Sift the flour, cocoa powder, sugar, baking powder and baking soda together.
In another bowl mix buttermilk, olive oil, vanilla and egg.
Mix the dry and wet mixtures together.Add the hot water and mix.
Divide the batter between baking pans.
Preheat the oven to 180 °C or 356 °F and bake for 30 to 35 minutes depending on your cake pan.
Make sure to test the cakes with a wooden skewer.
1 cup + 1/3 cup dark chocolate / (200 g)
2/3 cups heavy cream / (140 g)
1/4 cup powdered sugar / (30 g)
1 tbsp honey
1/8 tsp salt
In a bowl add the chocolate, honey,powdered sugar and salt.
Heat heavy cream in a pot.
Pour over the chocolate and mix.
If the chocolate does not fully melt you can heat the ganache in microwave
for a few seconds or over a warm water.
When the ganache is in room temperature you can fill and frost the cakes.
