Gluten-free hazelnut fig cookies

 These gluten-free hazelnut cookies are

Powdered sugar-covered cookies with a soft, crumbly interior held in hand.

Gluten free hazelnut and fig cookies: 

65 g dried figs chopped (1/3 cup + 1 tbsp) 

4 tbsp water 

1 tbsp honey 

1 egg white 

1/2 tsp baking powder 

125 g hazelnut flour (1 cup) 

Powdered sugar for coating  


Process the hazelnuts with food processor to a fine hazelnut flour. 

Cook the dried figs with water on medium heat until it softens. 

Puree the cooked figs with a food processor. 

Add in the honey. 

Mix hazelnut flour, fig puree, egg white and baking powder together. 

Shape into small balls and roll them in powdered sugar. 

Preheat the oven and bake at 160°C/320°F for 15 minutes.
